Hi Everyone, I hope you’re all well and safe at home. I spent the first few days of this new  reality stress cleaning and organizing, I even washed windows, before deciding to fill some of my newly acquired “spare” time working on unrealized cookie projects.

Even though the world has come to a screeching halt, and with it all my cookie orders, I’m still excited to bake, and I’m hoping my desire to make video and photo tutorials of my baking projects might also benefit some of you!

I don’t know if I’ve completely gotten my head around our current situation, or if I ever fully will, but humor seems like a good way to get through this ordeal, so my first tutorial will be toilet paper cookies. Who knew toilet paper would become such a focal point in all our lives?

Recipes:

Vanilla Sugar Cookies

This is a no chill, no spread sugar cookie recipe that will yield approximately three dozen cookies based on a 3-inch cookie cut at ¼ inch.

Ingredients:

  • 1 cup slightly softened unsalted butter
  • 1 cup packed light brown sugar
  • ½ cup granulated white sugar
  • 2 large eggs
  • 2 teaspoons vanilla
  • ¾ teaspoon salt
  • 4 cups all purpose flour

Instructions:

  1. Preheat oven to350°F. Line baking sheets with silicone baking mats or parchment paper.
  2. Cream the butter and both sugars together. Make sure there are no lumps.
  3. Add the eggs and the vanilla and mix thoroughly.
  4. Add the salt and mix.
  5. Add the flour one cup at a time until you’ve mixed in 4 cups. If the dough seems too sticky add additional flour a little at a time, up to ½ a cup, until the dough pulls away from the side of the bowl.
  6. This dough does not require chilling, and can be rolled and baked immediately. However, if you do plan to chill and bake later do not add the additional ½ cup of flour, as the dough will become too dry.
  7. If you roll to 1/4” thick, bake for about 12 – 16 minutes on the bottom rack. To obtain an even bake turn the tray half way through.

Royal Icing

This royal icing recipe can be split into as many colors as desired and will be more than enough to cover 3 – 5 dozen cookies. The icing will last 3+ weeks in the refrigerator.

Ingredients:

  • 1 two pound bag of powdered sugar
  • 7 tablespoons of meringue Powder
  • 2 teaspoons or more vanilla or other desired flavor
  • ¾ cup water
  • White food gel (optional)

Instructions:

  1. Measure the meringue powder into the water and whisk until completely incorporated. Add your flavoring. Strain the mixture into the mixing bowl to ensure it is lump free.
  2. Mixing on low add the powdered sugar in small amounts (adding the entire bag at once will ensure that you and your kitchen will be covered in sugar) until you’ve emptied the bag.
  3. Mix until the sugar and meringue powder are completely combined and then some, about 8 minutes. Don’t over mix.
  4. If you’re only using one color add it now, otherwise you might like to separate into individual bowls.
  5. Your icing will be very thick, add additional water a few drops (careful, a little goes a long way) at a time until you’ve reached your desired consistency. Using a spray bottle will help control the amount of water. Don’t worry if you add too much; just add more powdered sugar until it’s where you want it. Thick like toothpaste or Greek yogurt for piping outlines, flowers and writing and thin like honey for flooding.
  6. Have fun mixing colors!
  7. If you don’t plan to use your icing right away cover the bowl with a clean damp dishtowel to prevent it from drying up. Store any unused icing in an airtight container for up to three weeks in the refrigerator.

Tips & Tricks

  • Scoop your flour into the measuring cups to prevent using too much flour.
  • Bring your butter to room temperature.
  • Use C&H Sugar.
  • Baking times are approximate as every oven is different. For example I bake 14 – 16 minutes, but you may only need 7 – 10 minutes.
  • Roll your dough onto parchment or a silicone mat. If your dough seems sticky sprinkle it lightly with flour and or place a piece of parchment over the top.
  • Don’t try to roll out the entire batch at once, cut off sections. Don’t use a lot of flour.
  • Try not to handle or roll the dough too many times. Remember the more you touch it the tougher it will become.
  • To ensure that your cookies are all the same level, place dough guides on the end of your rolling pin, or onto your rolling surface.
  • Dip your cookie cutters and spatula into a bowl of flour each time.
  • Depending on your dough recipe chilling the dough for 5 – 7 minutes before baking will help the cookies keep their shape, prevent spread, and ensure that any fun cookie cutter imprints will remain during baking.
  • Cover your baking sheets with parchment or silicone mats. Use parchment up to three times before replacing.
  • Turn your baking sheet half way through to ensure an even bake.
  • Meringue Powder – Ensures your icing will dry hard and smooth. Can be purchased online or any cake supply.
  • To ensure consistency use food gels rather than liquid food colors to color your icing. Americolor and chefmaster are two popular brands.
  • Prepare your piping bags or bottles first.
  • Use a glass to hold your piping bag upright.
  • Patience and practice are your KEY ingredients! Take your time, and practice practice practice.

Only 50 miles from London, and easily accessible via train, Cambridge makes the perfect day trip. While you’re there visit the colleges, go punting, stroll The Backs, enjoy a pub lunch and of course some sweet treats. If I’m being completely honest, we skipped the pub lunch and went straight for the chocolates.

We may have skipped the pub, but we didn’t miss lunch. We picked up sandwiches from a local grab and go and enjoyed them on the river, and if you’re so inclined and have a good handle on steering your boat, you can grab a Pimms cup from the Floating Cam Bar to go with your picnic! Only £5!

We loved the ducks, and other water fowl, on The River Cam in Cambridge, and they loved us, or at least they loved our lunch, especially the popcorn. At one point I thought they might get right in our punt!

One of the most iconic buildings in Cambridge is Kings College Chapel. You’ll need a ticket to enter, but its worth the price of admission, building started in 1446, just four years after the college was founded with finishing touches completed by King Henry VIII, is there anything in the UK that he didn’t have a hand in?

There are various trails of varying difficulties all with breathtaking views, and on a clear day, which we were lucky to have, you can see across to France. Thankfully the trails are just far enough back from the edge, so you won’t feel nervous.

If your visit coincides with the low tide you can take the trail, which includes stairs, 350 feet down to the beach below, but keep in mind you’ll have to get yourself back up.

There is a lighthouse at the end of the trail, and if you’re so inclined they offer a lovely afternoon tea right inside the lighthouse. However we had the castle in mind, so we opted for an ice cream cone to go instead. We were joined by a park ranger along the way who chatted with us about the area’s fascinating history.

Banksy’s Brexit Mural

The search for public art, wall murals and graffiti often plays a large role in my travels, but I admit I practically stumbled upon this very large Banksy piece, while on the road to Dover Castle. As you can imagine I was really excited to see the Brexit inspired piece up close. You’ll find the mural on the Castle Amusements building near the Ferry Terminal in Dover.

We did a big loop which took us past many of the city’s most famous spots including: St. Paul’s, the Millennium Bridge, The Globe Theater, The Tate Modern, The London Eye, Houses of Parliament, Trafalgar Square, Covent Garden, and so many more. Stopping periodically for a treat was a great incentive and the 8 miles we walked helped to assuage any guilt we may have felt eating all those treats.

Touted by multiple sources as having the “best cupcakes in the world” we decided a visit to Peggy Porschen Cakes, would make our list. We sampled cupcakes and cocoa, and both were delicious. The pretty pink building with its candy colored decor and beautifully decorated deserts has made it a very popular Instagram photo location.

Hot chocolate is a travel tradition in our family, and no trip would be complete without it. My younger son and I made sure that a visit to Dark Sugars Cocoa House, on Brick Lane, was the number one stop on our recent sweets and treats tour of London. The tricky part was getting a photo of all that delicious chocolate before it melted… Also on offer, bowls of decadent and beautiful chocolates and creamy gelato in bright candy colors.

Taiyaki – Various Places

Stopping in Chinatown for Taiyaki, fish shaped cream filled buns, is another London tradition, and this visit was no exception. The texture falls somewhere between a waffle cone and a pancake, and they are traditionally filled with red bean paste, but custard and Nutella are other popular options. Larger taiyaki are filled with soft serve in traditional asian flavors like ube and black sesame.

Warm Caramelized Peanuts

You’ll find cart vendors selling warm caramelized nuts all over the city. We’ve often stopped at the one at the foot of the Millennium  Bridge just outside the Tate Modern. Sticky sweet and warm makes for a nice combination on a cool evening by the river.

Sketch

This delightful Pink Panther Mousse was the perfect end to our Sketch experience. Sketch, located in London’s posh Mayfair neighborhood, is one of The City’s trendiest dining spots, but it’s not just a pretty face with Insta worthy decor (though it has plenty of that in spades), the food is also beautiful and more importantly delicious. Each of the multiple dining areas, all with different themes, has its own menu and price point making this fun and quirky spot accessible to everyone.

We’re big fans of bubble tea (boba) and apparently so are Londoners as there were long lines at every bubble tea spot. Bubbleology in Notting Hill was a perfect place to stop and take a break. I chose the more traditional Milk Tea with boba, but they offer many unique flavor combinations including, grape, lychee, and even Nutella boba, which was my son’s choice.

Fortnum & Mason

Fortnum and Mason has been a London institution for over 300 years, so when I told friends I’d never been they were shocked! How could I have missed such a special place? I knew I had to remedy this situation on my very next visit and so I did.

 

To say we were not disappointed is an understatement. Pastry cases filled with the most decadent treats, dark wood shelves lined with the prettiest biscuit tins you ever saw, tea, coffee, jams, picnic hampers, iced biscuits, and chocolates, and that was just the food hall. The interiors are as decadent as the offerings and we spent ages admiring everything and doing our best not to put everything we saw into our basket. Fortnum and Mason is now on our permanent London List.

London’s oldest food market has been serving the people of Southwark for over 1000 years. Travel Inspired Teen Room Makeover

Summer projects have become a tradition in our household. Previous years, have included make your own longboard, and paint your own skateboard deck. Most recently we gave my younger son’s room a complete makeover. Elliot graciously let me choose the  design, and looking for a way to incorporate all the photos we take on our family adventures we decided on a travel photography theme.

He’s a tween, so we wanted something that would take him through the next few years, and still feel “cool” or at least until he decides to move into his older brother’s room, when he leaves for college in (sob) 2 short years. We gave it the full Do-it-yourself treatment. We made own shelves, painted the walls, created a mural, and applied decals, photographs and a DIY bulletin board.

I should mention that Elliot’s room is tall and narrow with the sleeping area below and the hang out space above, (which makes it difficult to get great photos). The upper portion of the room has a long narrow walkway, and that seemed like the perfect spot for our world map mural.

Where in the World Photo Mural

Having done years of extensive travel both separately and as a family we were looking for a fun way to display where we’ve been. Unable to find exactly what we had in mind we created our own.

Deciding which photos to hang up was probably the most difficult task. My family takes bets on how many photos I’ll take in any given location, so you can imagine that narrowing it down to just one per destination was near impossible, but I almost did it.

Tip: Order the photos before you start the painting process as they will both take a few days to be ready. My favorite online photo company is: MPix.

Elliot chose the paint color, mega blue, a perfect representation of oceans, but I swear I didn’t influence this choice. Here are the before and after photos of the wall:

Tip: Prime the wall first, and wait until the paint is completely dry before the next steps. Depending on the time of year, and the weather, this could be days, we waited four.

Once the wall is completely dry its time to hang up or apply your map. Although any map, or even paper cut outs would work, we chose a vinyl world map from Wall Need Love. In our case we planned to add a lot of photos, so I really like the simplicity of the map silhouette*.

Use a flexible pieces of plastic to push out any bubbles in your vinyl

Again your photos can be any size and mounted directly to the wall. I mounted ours to 1/4 foam board, which gives them a little punch and allows me to remove and replace easily, should we change our mind.

Your chosen destinations might seem obvious to you, after all you took the photos, but I thought it would be fun to have the location printed onto each photo.

Tip: Use photo mount to apply your photos to foam boards. Use double sided foam tape to apply them to the wall.

We opted not to string lines between the photos and their corresponding locations, but we did use map pins. We assigned a color to each family member, which we stuck directly into all the destination photos that each individual had personally visited. Red pins representing the countries and cities we stuck directly into the map.

Because Elliot’s room is two stories tall we needed some fairly large prints. This time we chose street art and graffiti photos from around the world. We had them printed 20 x 20 and mounted onto 1/4 foam board.

Pipe Shelving

Because the room is narrow it was difficult to find furniture that fit between the bed and the wall, so we made shelving that works as both night table and storage.

This next project does require some power tools, and an outdoor space to work in. We purchased the wood, the pipes and all the supplies at a local hardware store. If you don’t have power tools you can have the hardware store cut and drill the wood for you, and finish the project at home. Here are photo directions to the DIY Pipe Shelves:

I used a plastic wire tie to attach the charging cords to the shelving, as this seems to be an item that is easily lost. The lower bar, started out as nightlight storage, but has since become a place to hang headphones, and I’m sure it will evolve again over time.

Are you a city mouse or a country mouse? I’m most definitely a city mouse, but even a city mouse needs to escape the hustle sometimes, so this week I’m sharing my recent adventures at Malibu State Creek Park, which is the perfect spot to spend an afternoon. Not only is it a lovely scenic spot, but its close proximity to LA made it a prime filming location and for the better part of a century many of the films and television shows we know and love were filmed there. Where else in the world can you combine Hollywood with hiking, What about you, do you, where do you go to escape? Is it somewhere close by, or far from home? Either way, I hope you’ll share it with here on this week’s edition of Faraway Files.

Adventures of A Traveling Family

When the boys were younger I was frequently asked if I would be bringing them on our travel adventures. The answer was always yes! I know we traveled prior to their arrival, but I hardly remember what it was like, and with very few exceptions, the children have always joined us.

I confess there was a time when I thought occasionally leaving them behind would have been a nice option… Now that they’re getting older I realize our window for family travel is finite and I’m cherishing every opportunity. Speaking of which, my older son turned 16 this month, which is what led me to take this trip down memory lane.

It hasn’t always gone according to plan, we’ve left strollers in parking lots, formula at home, and wipes in the airport bathroom. Traveling while potty training is always interesting, and I apologize for whoever sat in our seats on United LHR – LAX back in April 2006.

Elliot suffers from air-sickness, and has pretty much thrown up in every place we’ve ever visited, (Lucky me?) I’ve been there to catch it in just as many places. On the rare occasions when this hasn’t happened, Simon usually takes his place. We’ve lost a few retainers that way.

We brought Salmonella home from Hawaii and Fifths Disease to New Orleans. Our flight left without us in Barcelona, we filled our diesel car with gas in Ireland, and once came back to a car filled with thousands of ants in Santa Barbara.

For the most part we’ve been able to make lemonade out of lemons, except maybe that time with the ants, and though our style of travel has changed as the boys have gotten older one thing has stayed the same and that’s my love of the uninterrupted dedicated time that traveling as a family gives us.

A trip to Maui when Simon was just 13 months was our first long distance flight as a family. Happily it went off without a hitch setting the tone for future family travels.

Simon was three when we took Our first long haul flight to Europe. We visited London, Barcelona, and Bilbao. Everything was going according to plan until the plane left without us in Bilbao. Thankfully, the airline put us up in a nearby hotel where I had the best pastry I’ve tasted in my life.

Visiting the Forum alone with two hungry boys who wanted to be anywhere else isn’t one of my fondest travel memories, but I love what happened afterwards when I treated  them to McDonalds. It was the most crowded one I’ve ever seen (to this day), and there was no way I could get inside with a stroller. I couldn’t leave the boys alone, so 9 year old Simon braved the crowd, pushed his way to the front, and ordered two Happy Meals! Where there is a will there is a way!

In 2016 we set off on a six week journey, our longest trip ever. During our travels we almost kissed the Blarney Stone in Cork, Ireland, signed the Peace Wall in Belfast, Northern Ireland, went to art school in Glasgow, Scotland and walked on Hadrian’s Wall.

We spent a few days in London (I wished for more) visiting some of our favorite places, before hopping the train to Belgium where we wished we’d eaten way more chocolate, Amsterdam where we visited Anne Frank’s House and Van Gogh’s Museum and finally Paris, where we practiced our French, sailed boats and wandered aimlessly.

New Orleans/American Southwest/England 2017

2017 was a busy travel year. We stuffed ourselves during our annual trip to NOLA and survived the soaring summer temperatures on a 2000+ mile road trip through the Great American Southwest. Finally, we brought the year to a close in London where we froze our Southern California butts off on multiple day trips and outings including Bath, Stonehenge, Windsor, Kent, and WB Studios.

Obviously not, but I’ve learned a lot from the photography classes and tours I’ve taken and I’ve happily received advice and tips from fellow travel bloggers, professional photographers, and other snap happy friends.

Safety First!

No photo is worth serious injury, or your life.  Stories of travelers and selfie takers losing their lives in the pursuit getting that perfect shot are becoming more and more frequent. Make sure you’re wearing appropriate attire for your surroundings, stay on marked pathways, and if it feels unsafe, it probably is.

Located just outside Page, Arizona, Horseshoe Bend is one of the most photographed spots on the Colorado River. I really wanted to see it, but I wasn’t willing to walk to the edge of a 1000 foot drop to get the big picture. I literally crawled to get to this point and still didn’t get everything into the frame.

Clare’s pursuit of the perfect photo hasn’t always gone to plan. She says clumsiness and lack of sensible shoes mean she shouldn’t even be trusted with a camera, and admits to getting carried away by the beauty of a place. I’m a big fan of her work and hope she gets safely carried away more often!

This is the tiny Mediterranean Island of Gozo. The rock formations in front of me are extraordinary and I scramble down to the rocks only to discover that I can barely walk across this jagged surface in my flip-flops.

Clutching my camera to my chest like a baby, I stumble on. I’m used to cuts and scratches but I’m so frightened of damaging the camera that I end up bum shuffling across the rocks, much to the amusement of all the sensible tourists in trainers.

  • Getting that perfect shot takes time and patience. Be prepared to wait ages for the right light or for the crowds to disappear.
  • Try each shot from lots of different angles.
  • Bring sensible footwear and plenty of plasters (bandages).
  • Carry your camera in a padded bag.
  • Make sure that your travel companions have got something else to do while you take lots of photos.

Simplify

Beverly Friedman has traveled and photographed the world. She focuses mainly on landscapes and wildlife, and in the interest of full disclosure, also happens to be my aunt. She has definitely succeeded in getting The Shot!

This first photo is on the Isle of Skye; a place called the Fairy Glen. The stones really gave the scene an eerie or magical effect. It’s a simple composition that reflects the place.

  • Simplify, simplify, simplify. Including too much in the photo detracts from its effect.
  • Remember to check the edges for distracting elements.

The second photo was taken at Machu Picchu. Here, I wanted to show the perspective of the size of the monument compared to the size of the people, therefore, the people are small. Notice that the image shows all of the figures.

  • Remember to avoid cutting off the feet and/or bottom of the legs. Head only or head and shoulders only are also okay.
  • When photographing people, the simplify rule still applies. If the emphasis is on the people, zoom in.

This gorgeous photo of Castel Sant’Angelo was the final result out of 100 photos. Katy has two favorite methods for getting a shot she is happy with:

  • The first is to patiently wait until people move out of the way or clouds float away in the sky. By that stage I have framed my shot and know the light.
  • The other, more common method, is deployed often due to having to control two 5 year olds. On those occasions I put the setting on burst or multi shot mode and pray one is going to turn out ok. Then of course I have to spend hours editing. But it’s worth it!

Photographing people can be a sensitive issue. In some countries there is no expectation of privacy in a public place, whereas in others, it’s illegal to photograph people. Some cultures frown upon it for religious reasons and in some cases it’s just plain rude.

  • Rather than covertly sneaking a snap of someone without them knowing, the best way to photograph people is to ask them. I’ve rarely had anyone say they didn’t want their photo taken. With their consent, I have time to set up the shot properly to make sure it works.

The only problem with this strategy: they instinctively start posing; ruining the unforced moment I was hoping to create.

  • Take a bit more time and help them relax by asking some questions. While they’re telling me their name, occupation, family history, I can snap a few shots in-between responses and create a much more natural moment.

Cappadocia in Turkey is a dream location for photographers and Instagram aficionados. I caught these two in a romantic moment just inside the corner of the frame.

  • Try to shoot into the sun for maximum warm glow, making sure there is enough light on the subject so they’re not obscured by shadow. In this case it didn’t matter because they were only a small part of the overall shot.

The charming village of Moustiers Sainte Marie in Provence is said to be one of the most beautiful in France. It’s built on terraces about 100 metres up a limestone cliff.

  • Capturing a shot that includes the sun is an easy way to add some extra atmosphere to your photo. But, you want the sun slightly obstructed to get that nice flare effect.
  • Wait for the sun to dip partially below the horizon or position yourself so it’s just poking around the side of a tree or a wall. That way, you’ll get nice golden rays without overexposing too much of the frame.

We can’t have a post about travel photography without including the Selfie. Lucky for you my friend and fellow travel junkie, Melissa, loves to take selfies and she is truly the master. I’ve coaxed her into sharing some of her selfie secrets.

Ah, selfies. Love ’em or hate ’em, they’re here to stay and there’s absolutely no good reason why you can’t look your absolute best just because you’re taking the photo.

Self Awareness

A good selfie starts with self-awareness. Do you have a good side? Do you think you look more attractive posed a certain way? You’re probably right! When I take a selfie or a picture with anyone else, I elbow my way to the left-hand side of the group because I feel my left-hand side looks better than my right. Try it. Take a photo of both sides of your face and figure out which one you like best. Go ahead. I’ll wait.

Angle

Everyone looks better when photographed from up high. A high angle will take 10 years and 5 pounds away. Take a selfie with your camera at arms length first at face level and again from as high as you can get your arms, angled downward. You didn’t know you had those cheekbones, did you? Almost nobody looks good when you take a selfie from below (hello, multiple chins)!

Make sure the person with the longest arms takes the photo, angled from above. My darling husband has arms the length of an orangutan and it’s just one of the many reasons I love him.

Lighting

Backlighting (sunlight or any bright light behind you) will make you look super cool. As an example, I took this bikini photo at the Disneyland Hotel pool. I was feeling good (probably all those vodka sodas on the way to Anaheim) and decided to snap this photo. I’m a 50-year-old Mom of two and I thought it was pretty cute. Note the high angle & backlighting. Sunglasses help too!

Will you Take My Picture?

“Will you take my/our picture?” If you’re a traveler you’ve heard this sentence countless times, and maybe you’ve even asked it, I know I have.

Would you like us to take your photo?

It’s always the same… you find yourself somewhere special, and you want to preserve the moment, so you ask the nearest person to snap your photo… then you snap one for them. When you look at the picture it’s blurry, your legs are cut off, there’s nothing of interest in the background, it’s crooked, or worst of all it’s someone else’s face.

Oh no! You might never be in this faraway place again, now what? Keep asking people until you get just the right shot? Take a selfie?

This was the only family photo we got during our visit to Stonehenge, which was a dream destination of mine. I should have heeded my own advice, and asked for another photo, but my impatient children and husband weren’t in the mood…

  • Don’t be afraid to give your “photographer” some photo direction. Tell them just what you want. You may never be back to this place, so don’t be shy.
  • Somewhere special? Make sure you ask them to include the background. This may seem obvious, but believe me it’s not.
  • Remember to stand up straight and push your glasses up.
  • If you ask someone to take your photo, offer to take one for them as well.
  • You’ll get the best results when you hold the camera level with or above the subjects.
  • Take the photo you’d want for yourself, and do a good job!

We should have requested that our “photographer” include the Mickey Fun Wheel in our photo. Whoops!

  • It’s not cheating when you straighten or brighten a photo. Even professionals do some post production.

  • Think outside the box: consider other angles or perspectives, Get down low, aim high, or from the side and focus on small details rather than the big picture.
  • Reflections make wonderful photos and even the smallest puddle can do the trick. If using a phone  hold it upside down just over the water to get the best effect.
  • Do photo research. Going somewhere special or new? Take cues for what and what not to do from  photographers who’ve already been to your upcoming destination.

Travel Mishaps When Life Gives you Lemons…

I’ve been happily planning our family’s next big trip and I’m pretty excited about it! After a year of dreaming, pinning, reading blogs, and saving some instagood ideas I’ve finally booked my flights and accommodations!  We’ll be heading to London for two weeks over the Christmas holidays, a dream come true!

Now that our flights are booked, its time to narrow down, prioritize and finalize some of those fun ideas I’ve been thinking about all year. I’ve been booking tickets and tours, researching day trips, and making plans… secure in the knowledge that even with the most careful and organized planning I won’t get to do all of it… something will go wrong.

Yes, you read that right. Something will go wrong, something always does! The key is knowing that even though I don’t know what that something is or when it will present itself we make the best of it when it does.

As the saying goes:

“When life hands you lemons, you make lemonade.”

Lost In Tempura

Life’s given you lemons when you think your dinner check will be on the very reasonable side but actually ends up costing as much as all the other meals on the entire trip combined! Whoops, we made a mistake with the conversion from yen to dollars…

That said…

Our meal was fantastic, in fact it was hands down the best meal we had the entire trip! Tempura in Japan was incredible and nothing like anything we’d in the States. The batter was light as air, the house made sauce was divine, and we learned a new way to enjoy tempura, a squeeze of lemon and a pinch of salt. It had been the perfect way to end what we all considered the vacation of a lifetime!

Killarney

Not having a car meant cancelling our trip to the Dingle Peninsula, which although disappointing, turned out to be more than okay as we spent a lovely day wandering in the Killarney National Park. Located just across the road from downtown Killarney and about one block from our hotel it was just steps away. No car needed! The weather was somewhat unpredictable, but the boys loved walking into the wind and rain! The park path twisted and turned through forest and meadow and at the end a castle!

Life’s given you lemons when you’ve traveled half way around the world to see the famous Benagil Sea Cave (listed as one of the world’s most beautiful places), and high winds, during the entire visit, prevent you from ever reaching the cave, which is only accessible by boat.

We ended up at the Praia da Marinha, listed by the Michelin Guide as one of the ten most beautiful beaches in Europe and as one of the one hundred most beautiful beaches in the world! The entire time we were there I kept thinking how amazing it was and that this couldn’t be real! The high winds and surf prevented swimming, but we relaxed on the sand, dipped our toes in the water and took many photos.

Just Be Nice

Life’s given you lemons when fellow tourists behave badly. Our visit to the Las Vegas Neon Museum would have been perfect, but for the rude behavior of another guest. His strange and threatening attitude put everyone on edge, including the guide.

Sour Lemons

Sometimes it’s just not possible to make lemonade no matter how much sugar you add to those sour lemons…

Life’s given you sour lemons when you go to load up the car after a fun weekend in Santa Barbara, and find it crawling with thousands of ants! I’m not sure anything could have prepared us for that! Four hours and a through cleaning later, we set off for home. Needless to say the ride wasn’t our most relaxing.
